Pumpkin and sunflower seed bread buns with goat’s milk cheese, grilled radicchio and onion jam

When in a hurry, have a sandwich. But why not make it a gourmet sandwich? Here’s a tasty original recipe from
chef Mario Grazia, who has come up with fifty unusual sandwich recipes for a book edited by
Academia Barilla, published a few years ago by White Star and still perfectly up-to-date today.
In this post, we publish the recipe for
pumpkin and sunflower seed bread buns with goat’s milk cheese, grilled radicchio and red onion jam. The description is mouth-watering... Tart goat’s milk cheese, in contrast with bitter radicchio and sweet jam!
Preparation time is an hour and fifteen minutes: 30 minutes to prepare the ingredients and 45 minutes to cook the onion jam.
Here are the
ingredients for four bread buns:
• 4 pumpkin seed and sunflower seed bread buns, weighing about 80 grams each;
• 400 grams radicchio;
• 250 grams goat’s milk cheese;
• 15 millilitres extra virgin olive oil;
• salt and pepper.
For the
onion jam:
• 300 grams red onions;
• 100 millilitres red wine;
• 40 grams cane sugar;
• 1 tsp acacia honey.
Directions:
• Peel
onions and slice thinly. Put them in a pan with
honey,
wine and
sugar and cook over low heat for about 45 minutes.
• Trim and wash
radicchio and cut into slices about one centimetre thick. Season with
salt and
pepper, grease with half the
extra virgin olive oil and grill. Drizzle grilled radicchio with the remaining olive oil and leave to marinate for a few minutes.
• Cut
bread buns in half horizontally.
• Arrange
grilled radicchio over the bottom half, add sliced
goat’s milk cheese and complete with
onion jam.
• Cover with the top half of the bread bun and enjoy!
