A woodland dressing: apple vinegar with raspberries

2017-08-28 It’s time to take a walk in the woods. Raspberries are in season and it’s time for an unusual, tasty dressing. Let’s forget jam, syrup and jellies and make someapple vinegar with raspberries. It has an unusual flavour that’s perfect for any dish where you want to add or heighten the acidic-sweet and fragrant note that these little red fruits provide.
Raspberries have countless qualities: they are rich in minerals and contain substances that make them excellent fat burners and effective anti-agers. Basically they’re ideal if you want to stay in shape and have less wrinkles than Snow White’s wicked stepmother.
The recipe is taken from the bookFiori e frutta in cucina (Terra Nuova Edizioni), one hundred original recipes with fruit, flowers, shoots and sprouts, from starters to desserts, bychef Antonio Zucco.
The vinegar is easy to make and takes only 5 minutes, but should be left to rest for one or two weeks..
Here are the ingredients:
• 250 ml apple vinegar;
• 7-8 raspberries
How is it made?
• Place the apple vinegar and the raspberries in a small bottle or glass jar.
• Leave the dressing to rest for one, two weeks before use and leave the fruit in the container.
